So let me start with a little bit of the substitutions:
Coconut Aminos instead of Fish Sauce. Tastes more like Teriyaki sauce but in recipes it doesn't make it "sweet"
Vegetarian Worcestershire Sauce (has no fishies in it)
Amino Acids instead of soy sauce (the aminos are good for you!) Tastes like soy sauce but you get the amino benefits! Just be aware that the salt content is higher than kikoman's regular soy sauce.
No gelatin! it is made from bovine bone! So no Jello!
Agar Agar, Xanthum Gum, Tapioca flour are all acceptable substitutes to thicken things.
No Vitamin A Palmitate. It's from/in Liver, Eggs and Cheese (there is a vegan option made from plants but if it doesn't have the Vegan V on the package, put it down!)
Ceasar Dressing: carefully read the label, not all of them have anchovies (fish for those that don't know).
Regular Flour: use almond flour for loaves of breads, cassava flour for tortillas. I haven't used the coconut flour yet. Google a recipe for the bread, just pop vegan in there and you'll be amazed at the amount of recipes.
Oils: Switch to Olive oil. Extra Virgin Olive Oil (EV or EVOO) is the best choice. Carefully look at the label, there is an EV olive oil blend. That's a no-no. Seriously any other oils you've still got in the house can be used in your chain saw instead of bar and chain oil!
Avocado Oil: actually has no flavor and is a good option as well. It is on the expensive side so we don't cook with it. We use it in breads.
Walnut Oil: So long as there is no nut allergy, it gives a slightly nutty flavor so goes great with mushrooms!
Peanut Oil: Same as Walnut Oil.
Sesame Oil: Also a nut! There is a plain sesame and a toasted sesame oil. You'll just have to try them to see what you prefer. I prefer regular and CJ and spouse prefer the toasted. We use it mainly in Asian dishes like our fried rice or stir fry, just use sparingly until you know the taste you like. Literally a drizzle for 5 seconds and stir well.
Questionable Oils:
Soybean Oil:Has health benefits but it's high in Omega 3 and 6 fats. The problem arises due to processed foods having a high omega 6 and we don't get enough omega 3 so this imbalance causes inflammation (arthritis pain). So I've opted to stay away from it and not suggest it as CJ takes enough vitamins to get the fats needed.
Massive Oil No-No's:
Canola, Corn, Safflower, Sunflower, Vegetable
Seriously they are only good for your chainsaw but we did find out recently that these oils will freeze in winter, just keep that in mind if you need your chainsaw in winter.
