Dr Gundry's The Plant Paradox isn't truly a "diet" but please talk to your doctor first! Blood work (CBC, Liver, Kidneys, Thyroid) should be done to ensure you aren't already vitamin or mineral deficient! Wouldn't hurt to throw in the RA test so that you have baseline results to compare it to.
Some of you may have heard of Dr Gundry and the plant-based diet of his. While it may seem extreme, it's actually pretty easy, even for us 2 carnivores. The biggest hurdle is the bread. Store-bought bread is filled with preservatives and sugar. There are some that aren't but the majority are extremely bad for you! I suggest you look into his cookbooks either at his website https://drgundry.com/
or on Amazon. I have 1 of the cookbooks through Kindle Unlimited. That's not to say it is still available that way, just specifying that it's in the realm of possibilities.
So lectins do a few bad things but the most offensive is their ability to absolutely ruin your gut health. Those little buggers grab onto the good stuff and out it goes instead of being absorbed. Looking up lectins you can find studies that show calcium, zinc, Iron and phosphorus just don't get absorbed. Rheumatoid Arthritis or plain old arthritis (osteo) can be exacerbated by lectins. Bestie has pretty much eliminated all lectins and his arthritis has "disappeared".
My carnivore self loves a lot of the good things on the Gundry yes list so it isn't a big step for me. But those of you that have Alpha Gal need to start working on liking veggies and beans! Lots and Lots of beans! Bestie and I don't really like beans and sometimes I'll put baked beans in my mouth and go nope, and just be done with them, and I like baked beans!
